Preheat the oven to 180C.
Mash the bananas and peanut butter with a fork until smooth.
Fold in the oats, nuts, seeds, maple syrup and coconut oil. You may need to add a splash of oat milk if the mixture is too stiff.
Roll the mix into balls and flatten slightly. These cookies won’t expand much in the oven, so you can place them quite close together.
Bake for 25 minutes. Turn the oven off but leave the cookies to cool inside the oven (this gives them a crunch on the outside but a gooey middle)… and enjoy!
The great thing about this recipe is that it still works even if you don’t have some of the ingredients. You can be flexible with the seeds and nuts – use cashew or almond butter instead of peanut – add chocolate chips or ditch the walnuts… simple, tasty cookies every time!
